Each year, participants blend flavor and courage to create their own unique gin. This year's competition is inspired by "xiaolongbao" (soup dumplings), emphasizing the unique warmth and aroma of Taiwan's everyday food culture. Participants interpret the multi-layered sensations of steam, meat filling, soup, and dough through flavor design, and recreate the delicious impression of "bursting open in one bite" using gin vocabulary, showcasing the refined possibilities of snack culture.

In 2025, we invited bartenders to return to the most familiar flavors under the theme "I Love Xiao Long Bao." The dough, the filling, the broth—seemingly simple, yet they carry the accumulation of time and skill. They deconstructed the structure, and also deconstructed memories; transforming steam into aroma, and layers into body. This wasn't about turning food into alcohol, but about rediscovering how a culture is perpetuated. Courage lies not in exaggerated innovation, but in the interpretation that follows understanding.

They deconstructed the plot and the senses; they transformed the visual into layers and the tension into the body of the drink. This was not about imitating a story on screen, but about redefining how narrative is tasted. Courage lies not in flashy techniques, but in the moving translation that comes after understanding the story.

In 2023, under the theme of "The Taste of Home," we invited bartenders to find the warmest memories in their hearts. Osmanthus, oolong, and earthy aromas—seemingly ordinary, yet carrying the weight of growth and a deep connection to the land. They dismantled nostalgia, and also dismantled the terroir; transforming memories into aromas, and emotions into the body of the drink. This is not about replicating traditional beverages, but about reinterpreting how culture is passed down. Courage lies not in the ambition to subvert the classics, but in the warm and original presentation that comes after understanding the roots.

In 2022, we invited bartenders to capture the island's most vibrant seasonal characteristics under the theme "Taiwan Summer." Fruits, blazing sun, and thunderstorms—seemingly scorching, yet they embody the cycle of life and nature. They deconstructed the seasons, and they deconstructed the ingredients; transforming temperature into coolness, and vitality into the body of the drinks. This wasn't about combating the sweltering heat, but about rethinking how terroir can be preserved. Courage lies not in deliberate innovation, but in the pure resonance with the land that comes from understanding nature.
